Tom yam kung nam khon
Tom yam kung nam khon is a spicy clear soup typical in Loas and Thailand. Tom yum is widely served in neighbouring countries such as Malaysia, Singapore and Indonesia, and has been popularised around the world.
Literally, the words "tom yum" are derived from two Thai words: "tom" and "yam". "Tom" refers to boiling process, while "yam" refers to a kind of Lao and Thai spicy and sour salad. So really, "tom yum" is a Lao and Thai hot and sour soup. Indeed, tom yum is characterised by its distinct hot and sour flavours, with fragrant herbs generously used in the broth. The basic broth is made of stock and fresh ingredients such as Lemongrass, kaffir lime leaves, galangal, lime juice, fish sauce and crushed chilli peppers.Now if you are not a lover of prawns you can also replace this by chicken, fish or other sea foods.
Ingredients
300 grams of fresh prawns (you may substitute with chicken or seafood)
1 cup of coconut milk
1 cup of water
2 tablespoons of Thai chili paste
3 large tomatoes diced
2 large limes
3 Kaffir lime leaves sliced
1 stalk of lemongrass thinly sliced
2 tablespoons of fresh sliced galangal
2 tablespoons of fresh sliced ginger
3 fresh red Thai chili peppers chopped
3 green onions chopped
1/3 cup of mushrooms halved
1/2 tablespoon of chicken oxo
2 tablespoons of Thai fish sauce
2 tablespoons of sugar
a pinch of salt
1 cup of coconut milk
1 cup of water
2 tablespoons of Thai chili paste

1 stalk of lemongrass thinly sliced
2 tablespoons of fresh sliced galangal
2 tablespoons of fresh sliced ginger
3 fresh red Thai chili peppers chopped

1/2 tablespoon of chicken oxo
2 tablespoons of Thai fish sauce
2 tablespoons of sugar
a pinch of salt
Step 1:
Bring the water and coconut milk to a slow boil in a large pot.
Step 2:
Add the Thai chili paste to the boiling water and milk.
Step 3:
Stir the pot until the curry paste is mixed with the water and milk.
Step 4:
Add the lemongrass and prawns or other meat you would use and continue to stir.
Step 5:
Squeeze the juice of the limes into the pot, as well as the remaining ingredients.
Step 6:
Simmer until the prawns or other meat is fully cooked, for prawns this should be around 3-5 minutes.
Step 7:
Take off heat and add to bowls, garnish with parsely and serve with a side plate of Jasmine rice.
Now in Thailand they would say " ขอให้เจริญอาหาร! (kŏr hâi jà-rern aa-hăan! " which means;
" Enjoy your meal"
