Lapsha ( Chicken and Noodle soup)



Lapsha in Russian means lituraly noodles and this recipe is one of the tradional recipes of the country.
For many years, “Lapsha” has been made by hand, the noodles are cooked with a little butter added for a good soup base. This soup was traditionaly served at funerals but now has become so populair that it has to many varieties to even start to mention so I am going to keep it simple and give you the basic recipe that you can experiment with and make as many tasty varieties as you could possibly think of.
You could replace your chicken with beef or even seafood, you could add a large variaty of diverent vegetables. The varieties are endless.






Chicken and vegetable Lapsha is just an example.






Ingredients:


- Whole chicken
- 1 big onion
- 1 quart / liter of water per pound of chicken
- salt
- 2 to 3 celery stalks

You can but pre-packed egg noodles but here are the ingredients needed to make them yourself.

- 5 egg yolks
- 10 table-spoons of cold water
- plain flour


To make the Broth:


Step 1:

Boil the chicken and celery until done with the whole uncut peeled onion in a large sauce pan on medium heat. Co0ok your chicken untill it falls appart in your broth.

Step 2:

After finished cooking, remove chicken and onion and celery, strain it if you like.

Step 3:

Leave broth in sauce pan and remove bones and skin from chicken.
Put only the meat back into the saucepan with the broth, not onion or celery just the white chicken meat.

Prepare the Noodles:

You can always use pre packed egg noodles from the shops but i like to prepare my own which is easy to do and better to my taste. If you choose to buy them, continue to step 7.

Step 4:

Mix yolks and water and salt to taste in a mixing bowl.
Then in mixing bowl add flour till the pastry will be not sticky and will be stretchable.

Step 5:

Continue to knead dough for at least 10 minutes.
Then roll it out like pie dough thickness into a circle shape and leave standing for 10 minutes.

Step 6:

After standing for 10 minute powder the top with flour and roll the circle up into a long tube.
Slice the rolled up dough into thin slices no more than one eighth of an inch thick and leave sitting for 10-15 min.


Step 7:

Prepare another sauce pan with water boiling (Three liters is enough water.) and add the noodles to the boiling water for no more than two minutes (2 min)


                                                       Step 8:
Also start reheating on low to medium heat the chicken broth that you made.
Then strain the noodles out of the water and add them to the chicken broth.
Cook till noodles will be finished and the broth seems to be thickening. Takes anywhere from 15 minutes to 30 minutes.




Now in Russia they would say " приятного аппетита" which means;
              
                                                   priyatnogo appetita

                 


                                                  " Enjoy your meal"
