Kotlety Ziemniaczane ( Potato cutlets/pancakes)


The origin of these potato cutlets is quite hard to find but it is believed because the Polish foods have so many that are influenced by lots of Slavic counties, that these cutlets have been introduced to Poland by the Jewish community.
As there are so many Slavic influences in their foods this Potato cutlet can be eaten as a side dish to many dishes or even consumed on it own topped with some cinnamon and sugar.
So aswell as a savoury side dish it can be used as a sweet treat or desert.
Great to use up left over mash potatoes.
Here i will give you a recipe for the cutlets and will follow with a view tips to what it can be eaten with as savory side dish.

Serves: Minimum of 20 cutlets

Time: 30 - 45 minutes



Ingeredients:
- 1 kilo of potatoes
- 2 eggs
- 50 grams of plain flour
- 50 grams of Onion ( leave these if making sweet cutlets)
- 25 grams of butter
- salt and pepper
- 50 grams of dried breadcrumbs
- butter/oil for frying



Step 1:

Peel and slice the potatoes and boil until soft.
Mash well and leave to cool then mix in egg and flour.


Step 2: ( leave out this step when making sweet pancakes)


Dice the Onion and fry in the butter until lightly browned and mix together with the potatoes.
Mash all again very thoroughly and season with salt and pepper.


Step 3:


Form the dough into a roll about 5cm thick and cut diagonally into 3 cm pieces. Shape into cutlets, coat with breadcrumbs and fry on both sides in hot butter/oil until golden brown.







Serving tips:


Savory: Add a freshly made mushroom sause and top the cutlets with your sauce, Serve with Goulash, The cutlets also taste very nice with boiled red cabbidge
Sweet: Sprinkle with powder sugar and cinnamon, Can be served with some thick yoghurt and fruit jam or compot. These are great to eat with pomegranate aswell.


Now in Poland they would say " Smacznego " which means;

                                                              " Enjoy your meal"
