Whoopie pies


Pennsylvania, Maine, and New Hampshire all claim to be the birthplace of the Whoopie pie.
The whoopie pie is a bake of two chocolate cakes with a creamy frosting or marshmellow between them. The Pennsylvania Dutch claim that the whoopie pie comes from the area’s Amish and Pennsylvania German culture and has been handed down through generations. Most likely, Amish groups that migrated to Maine brought the treat to the people of Maine, where it is now a regional favorite. Where the whoopie pie realy originates from is hard to pinpoint but it is said that the name Whoopie comes from the peoples delight od eating them and WHOOPING with joy.


Serves: 24 pies


Time:

Ingredients:

- 125 grams of unsalted butter
- 200 grams dark soft brown sugar
- 1 large egg
- tablespoon of vanilla extract
- 280 gram of self raisin flour
- 40 grams of cocoa powder
- 1 teaspoon of baking powder
- 1/2 teaspoon of salt
- 125 ml buttermilk
- 125 ml soured cream
- 100 ml hot but not boiling water


For your marshmellow filling

- 200 grams of marshmellow fluff
- 125 grams of softened butter
- 200 grams icing sugar
- 1 teaspoon of vanilla extract
- 50 ml of milk




Step 1:

Pre heat your oven to 180C, cream together the butter and sugar for 2-3 minutes using electric handheld mixer untill light and creamy.
Now add egg and vanilla extract and mix well, Sift flour, cocoa and bakingpowder into a bowl and add salt, buttermilk and sour cream now whisk again untill everything is mixed together well.
Now add your hot water and whisk into the mixture.


Step 2:

Put a large spoon of mixture in your pie tin or on a lined baking tray, leave to stand for 10 minutes then bake for 10 to 12 minutes until crisp up the top put spongy in the middle, you can check this by poking the middle of your pie if there stays a dimple in the sponge then cook for a little longer.


Step 3:


To make the filling whisk together your marshmellow fluff and butter in a bowl using a hand held mixer.
Sift in the icing sugar and add vanilla extact and milk then whisk again for 3 to 5 minutes untill light and creamy.
Now spoon your filling in a piping bag if you have one, if not just spead it.
Add a generous amount of filling onto 12 of your whoopie pie halfs and top the with your remaining pie halves like a sandwich, and your whoopie pies are done.
