Boerenkool stamppot ( curly kale with potatoes)



serves: 4 people

This is a traditional winter one pot recipe that is easy to prepare.

ingredients:

-700 grams of curly kale
-1 kilo of potatoes
-salt
- 4 teaspoons of butter or vegitable fat
-1.5 dl of cold milk ( soy milk optional)

- 200 grams bacon cut into small pieces
- 1 smoked pork sausage






Step 1:

Peel the potatoes and dice them into quarters. Wash the potatoes after this process so most the starge is removed.
Put the potatoes into a large pan and fill it with cold water so it just covers the potatoes.


Step 2:

Clean the curly kale from all the hard storks and cut into smaller pieces but not to fine.
If you bought your kale from the local supermarket then wash your kale, and add a pinch of salt to your potatoes. Put the kale into the pan on top of the already prepared potatoes.



Step 3:

Place the potatoes and kale on a medium fire and cover the pan with a lid so the kale can steam.
If your using the smoked pork sausage these usually come pre-packed in all major supermarkets.

Place the smoked pork sausage inside its plastic surrounding on top op the kale and boil everything together in one pot for 30 minutes.

Step 4:

While the potatoes and Kale are cooking you fry your bacon if you choose to use these as both sausage and bacon are optional in this recipe.
This dish is very nice as a vegitarien meal aswell!!!



Step 5:

Poke the potatoes with a fork to see if they are done cooking, it should be easy to poke your fork trough them. If still a little firm boil longer till potatoes are soft.
Take your pan of the heat and take out the smoked pork sausage ( if your using this ingredient).

Step 6:

Strain the water of the potatoes and the kale and shake the pan so the potatoes mix in with the kale.
add your butter or vegetalble fat and poor in your milk.
Get a masher or fork and mash your potatoes into your kale, do this untill all is mixed well.



The vegitarian option can be served with pickels, pickeled onions or any other table sours.






Step 7:

If you are not choosing to use the vegitarian option and choose to add the fried bacon and/or smoked pork sausage then cut your fried bacon into small pieces and mix them trough your kale and potatoe mixture. You could serve your smoked pork sausage by cutting the outer packaging of and either serve it sliced on to or trough your kale mix or dressing your dish by laying your smaked pork sausage on top of you mixture whole.





Now in the Netherlands we would say " EET SMAKELIJK ", in other words;
