Chuan rou ( Spiced skewered lamb)



In Beijing there are many street stalls that sell Muslim delicasies and snacks such as Chuan rou ( in Mandarin Chinese, ' Chuan' means 'skewered' and 'rou' means 'meat').
this has become such a popular food that it can be found all over China.

The meat is coated in spices, skewered then cooked on a barbeque or grill, this gives it a wonderfull smokey flavour.
Great being served with simple orange and fennel salad which compliments the spiciness of this dish.

Serves: 2 people

Total cooking time: 20 - 30 minutes



Ingredients:

- 200 grams of lamb mince or fine sliced lamb fillet
- olive oil
- 1 teaspoon ground cumin
- 1 teaspoon fennel seeds
- 1 teaspoon dried chilli flakes
- 1/2 teaspoon paprika powder
- 1/2 teaspoon sea salt ( normal if you don't have sea salt)
- 1 teaspoon light soy sauce
- 1 teaspoon groundnut oil
- 1 teaspoon Shaohsing rice wine or dry cherry ( optional)


At the bottom i will show you how to compliment this dish with a orange fennel salad



Step 1:

Soak 8- 10 wooden skewers in some cold water for 20 minutes, this stops your wood from burnung if when you grill or barbeque your skewered lamb.

Step 2:

Combine all the ingredients for the seasoning in a bowl.
Add the meat and stir till it is nicely coated in the spices, now put your meat on the soaked skewers .
If using lamb mince make sure you press it around the skewers so the meat sits tight around it.

Step 3:

Now heat your barbeque, grill or griddle pan over high heat, drizzle a small amount of olive oil over your meat and place on your grill.
Cook until browned on one side, then turn over and cook for one minute.

Your skewers are now done you could sprinkel them with some sesame seeds if you wish.
Now i would like to show you how to compliment this spiced skewered lamb with a delightfull Orange Fennel Salad.



Ingredients:

- 4 tablespoons olive oil
- 3 tablespoons orange juice
- juice of 1/2 lime
- 1 tablespoon of light soy sauce
- 1 teaspoon toasted sesame oil
- 200 grams mixed, washed salad leaves
- 1 fennel finely sliced, dained 30 sec in cold water, drained
- 2 oranges, peeled and segmented
- sea salt and ground black pepper to taste





Step 1:

To make the dressing add a drizzle of olive iol, orange juice, lime juice, soy sauce, sesame oil, salt and pepper into a bowl and mix well.

Step 2:

Put salad leaves into another bowl and top with fennel, then add the orange segments and drizzle your dressing over the salad.

Tip: add some avocado to your salad.



Divide your salad over two plates and then place your spiced skewered lamb on top.

Now in China they would say " 请享用, Qǐng xiǎngyòng" which means;
                                                    
                                                         " Enjoy your Meal "
